You can see the dead yeast and other muck that has settled out of the wine. This is the 'yeast cake' at the bottom, and while there's a lot of dead yeast it also can be "washed" to salvage what live yeast are left. This is great for stretching out your yeast purchases, sort of like having a "mother" culture for sourdough bread. Still, these yeast are bred for specific attributes and if used for too long could mutate and develop undesirable traits.
